Chocolate Espresso Cookies Recipe

Chocolate Espresso Cookies

Ingredients:

  • 1 stick butter
  • 3 eggs
  • 1 cup plus 2 tbsp. sugar
  • 3 tsp. finely ground dark roast coffee (i've used instant espresso powder)
  • 3/4 cup flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt

Directions:

  1. Preheat oven to 350
  2. Melt unsweetened chocolate, 1 cup chocolate chips and butter over double boiler Stir until smooth
  3. In mixing bowl, whisk eggs, coffee and sugar until until a soft ribbon forms when lifting whisk
  4. Beat in chocolate mixture
  5. Sift flour, baking powder and salt
  6. Add to mixture
  7. Stir until just combined
  8. Add remaining chocolate chips and combine
  9. Drop batter by tbls. 2 inches apart on parchment lined baking pan
  10. Bake 8-10 minutes until puffed and cracked on top
  11. Cool completely on cooling rack
