Cranberry Orange Scones

Ingredients:

  • 2 cups flour
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1 stick butter
  • 1 egg
  • 1/2 cup
  • 1 egg
  • 1 tbsp milk
  • 1 tbsp orange extract (optional)

Directions:

  1. Whisk together flour, sugar, salt and baking powder in a bowl. Add cranberries and mix so they are evenly distributed. Add margarine in small cubes and mix with fingers or pastry blender until evenly blended.
  2. Whisk together eggs and milk in a small bowl. Gradually stir into the flour mixture until dough forms. Work dough with hands if necessary, but do not overwork.
  3. Drop scant 1/2 cup amounts of dough on ungreased baking sheets.
  4. For egg wash, beat together egg, milk and orange extract in small bowl. Lightly brush each scone with wash.
  5. Bake for 20-30 minutes or until lightly golden. Makes 8-10 scones.
