Cinnamon Pie Crust

Ingredients:

  • 1 1/4 cups flour
  • 1/2 teasp. salt
  • 1/2 teasp. cinnamon
  • 1/3 cup plus 1 tbsp. vegetable shortening
  • 3 - 4 tbsp. ice water

Directions:

  1. Combine flour, salt and cinnamon, mix well
  2. Cut in shortening with a pastry blender until crumbly.... about the size of peas
  3. Sprinkle with ice water ..1 TBSP. at a time over the surface
  4. Stir with a fork until the dry ingredients are moistened....****
  5. Shape into ball.
  6. Wrap in plastic wrap and chill about 30 minutes
  7. On lightly floured board using a floured rolling pin roll out dough to 1/8-inch thickness
  8. Transfer to a 9-inch pie plate
  9. Use sharp knife to trim edges of dough...about 1-inch beyond the rim of the pie plate.
  10. Fold edges over and crimp...
  11. Chill 30 minutes then use with your favorite recipe

  13. TIPS..... Do not over stir or work the dough ... it will make the crust tough
  14. Do not have room too warm...try to have a cool surface to work on
  15. Roll dough out very gently...
  16. The pea size lumps in the dough makes the crust flaky...
