Directions:

  1. Preheat oven to 350 then lightly grease a tube pan.
  2. Beat egg yolks then add sugar slowly and beat constantly.
  3. Add bananas, potato flour and cinnamon then mix well.
  4. Beat egg whites until stiff and fold into banana mixture.
  5. Pour into prepared pan and bake 45 minutes then cool briefly and remove from pan.
  6. In small saucepan melt chocolate chips and smooth over cake as glaze.
