Chipotle-Tomatillo Salsa

Ingredients:

  • 1 can 12oz can of embasa tomatillos drained and rinsed well
  • 3-6 chiptole chiles in adobo sauce, seeded. for a mild salsa use only 2-3 chiles
  • 1 clove garlic
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1 tsp water

Directions:

  1. Place seeded chiles, rinsed tomatillos, garlic and water into a food processor or blender. Pulse until tomatillos and chiles are blended fairly well and garlic is minced. About 6-8 pulses. Transfer to a small bowl, stir in sugar and salt to taste. Refrigerates for up to a week.
