Chewy Oatmeal Butterscotch Cookies

Ingredients:

  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/4 cup flour
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 3 cup oats

Directions:

  1. Preheat oven to 375 degrees.
  2. Cream together the butter and sugars.
  3. Beat in the eggs and vanilla.
  4. In a different bowl, mix the flour, baking soda, cinnamon, and salt.
  5. Gradually add and mix in the flour mixture to the sugar mixture.
  6. Stir in the oats and chips.
  7. Spoon onto greased baking pans.
  8. Bake 10-14 minutes.
  9. (They won't look fully cooked because of the butter, but they are! When you take them out, they will begin to settle into a nice chewy cookie.)
