Ingredients:

Directions:

  1. Melt butter in soup pan. Add onions, celery, carrots and cook until lightly browned. Add garlic and cook until fragrant.
  2. Add veggie broth and bring to a boil. Add corn, potatoes, and broccoli. Return to a boil and reduce heat. Cook until veggies are tender.
  3. Add velveeta, stirring gently until cheese is melted and soup is hot.
  4. Add salt and pepper before serving.
