  1. Preheat oven to 350°F Spray an 8x8 inch baking dish with non-stick cooking spray. Evenly spread half of the potatoes in the pan. Sprinkle 2 tablespoons of red bell peppers and 2 tablespoons of bacon bits over the potatoes. Spoon half of the can of cheese soup over the potatoes, peppers, and bacon bits. Add a second layer of potatoes, peppers, and cheese soup. Top with goat cheese, bacon bits, and green onions. Cover and bake for 30 minutes.
