Ingredients:

Directions:

  1. Boxty in the pan (Boxty bread):.
  2. Peel the raw potatoes and grate into a cheesecloth; wring over a bowl, catching liquid.
  3. Place the grated potatoes in a separate bowl and spread with mashed potatoes. When the starch has sunk to the bottom of the potato liquid (about 30 minutes), drain off the water and spread the starch onto the potato mixture.
  4. Add melted butter or bacon fat.
  5. Knead; roll out onto a floured surface and shape into fat cakes. Mark with a cross so that when they cook they will divide into farls (triangles).
  6. Bake on a greased baking sheet at 300 degrees for 40 minutes.
  7. Variation:.
  8. Boxty on the griddle (Boxty pancakes):.
  9. Use the same ingredients as for boxty bread, except add 1 teaspoon baking soda and enough milk to make a batter.
  10. Spoon batter onto lightly greased pan or griddle and cook both sides over medium heat.
  11. Boxty pancakes can be served with butter or sprinkled with sugar.
