Ingredients:

Directions:

  1. Preheat oven to 425.
  2. Lightly spray a large, heavy baking sheet.
  3. In a large mixing bowl, stir together the flour, baking powder, sugar(optional), and salt.
  4. Cut in shortening until mixture resembles fine crumbs.
  5. Make a well in center and pour in the buttermilk.
  6. Combine the buttermilk and flour mixture until a sticky dough forms.
  7. Turn dough on a floured surface and knead lightly 4-5 times, just blended.
  8. Roll out the dough about 1/2-inch thick.
  9. Using a floured 2-inch biscuit or cookie cutter, cut the dough into as many rounds as possible using a straight downward motion.
  10. Do not twist the cutter or the sides of the biscuits will not rise evenly.
  11. Place rounds on the baking sheet about 1 inch apart.
  12. If you want the biscuits with a very soft edge, place the close together on a baking sheet.
  13. Knead the dough trimmings together lightly, reroll, and cur out as before. Bake for 10-12 minutes or until golden brown.
  14. If you want brush the tops with a little melted butter and serve hot from the oven .
  15. Careful to keep an eye on them cooking times may very per stove.
