Ingredients:

  • 2 eggs
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup sour cream
  • cream butter with sugar until light and fluffy. add eggs, 1 at a time , beating well after each addition. stir in vanilla extract. sift flour with the baking powder , baking soda and salt and gradually stir into the creamed mixture.
  • stir in the melted and cooled chocolate and the sour cream. spray six giant muffin cups well with a non-stick cooking spray. divide batter evenly among the six muffin cups and bake in a preheated 350 degrees oven for 20-25 minutes or until cakes spring back if lightly pressed in the centers with your fingertips.
  • cool in the pan 5-10 minutes then turn out onto a rack to cool completely. when cool cut as directed in our diagram. frost and decorate as desired with our creamy bunny frosting.
  • 5-6 tsp milk
  • tiny jellybeans (for decorating)
  • beat cream cheese until light and fluffy. add powdered sugar and blend well; mixture will be crumbly. add vanilla extract and milk, 1 tbsp at a time to desired consistency. add flour and blend until smooth. ' glue' body parts together with a small amount of frosting. then frost bunny and add decorations.

Directions:

  1. To Cut and Form Bunnies:
  2. Slice each cupcake in half horizontally forming two circles, (each cupcake forms two bunnies by the way). Slice each circle in half, forming 4 semicircles. Stand two semicircles together, rounded edge up.
  3. Glue these two semicircles together with a small amount of frosting. Then glue the remaining two semicircles together in the same fashion.
  4. Now, cut a small wedge from one end of the glued semicircle. Save one half of the wedge for the bunny’s tail. Pop other half of the wedge into your mouth. It’s good, isn’t it?
  5. Glue the bunny tail onto the rounded end of the standing semicircles. Frost and decorate.
  6. Decorating Ideas for Bunny Cupcakes for Kids:
  7. Cut bunny ears from a sheet of pink construction paper. Make a small fold in the base of each ear to give the ear a sense of realistic depth.
  8. Pat shredded coconut onto each bunny while the frosting is still ‘wet’ to give your bunnies white ‘fur’.
  9. Tint some frosting with food coloring and pipe eyes and noses onto bunnies or pipe a small flower under each bunny‘s nose!
  10. Serve bunnies on small individual plates surrounded by shredded coconut that has been tinted green (optional)
