Ingredients:

Directions:

  1. Combine butter, brown sugar and cinnamon and stir to dissolve and mix well.
  2. Lightly brush butter mixture over one(or both) sides of each slice of bread. See Photo
  3. Bake bread at 425 for about 10 minutes until lightly browned and crispy. See Photo
  4. Meanwhile, toss fruits with lime juice, honey and nutmeg and set aside. See Photo
  5. Cool bread just enough to handle, and then spread with thin layer of mascarpone or cream cheese. It will melt, slightly, which is a good thing!
  6. Top each piece with a spoonful of fruit mixture and sprinkle with pine nuts.
  7. Serve immediately while still slightly warm, or these are fine to sit out for a while and eaten room temperature.
