Ingredients:

  • 2 cups blueberries
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 2 cups heavy cream

Directions:

  1. Combine blueberries, sugar and water and simmer for 10 minutes.
  2. Soak gelatin in lemon juice.
  3. Chill until slightly thickened.
  4. Whip cream until peaks form.
  5. Fold in blueberries.
  6. Cover and freeze 3 hours.
