Blueberry Crumb Pie

Ingredients:

  • filling
  • 1/3 cup flour
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp cinnamon
  • topping
  • 2/3 cup packed light brown sugar
  • 1/2 cup flour
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg

Directions:

  1. Preheat oven to 375 degrees.
  2. Press pie crust into 9-inch pie plate.
  3. In a large bowl, stir together the sugar, flour, cinnamon and cornstarch. Mix in bluueberries. Add lemon juice and fold gently to combine. Pour into pie crust.
  4. In a medium bowl, stir together brown sugar, oatmeal, flour cinnamon and nutmeg. Mix in melted butter with fork (or hands) until crumbly. Spread evenly over the pie filling.
  5. Bake for 60 minutes, or until top is browned. Cool on a wire rack.
