Bittersweet Chocolate Torte

Ingredients:

  • 1 lb high-quality bittersweet chocolate, chopped
  • 8 eggs
  • 1 cup sugar

Directions:

  1. Preheat the oven to 350; butter the bottom and side of a 10 springform pan.
  2. Combine the butter, chocolate, and coffee in a double-boiler and melt slowly, stirring, until smooth.
  3. Remove from heat and let cool for 5 minutes.
  4. In a separte bowl whisk the eggs and sugar.
  5. Add egg mix to the cooled chocolate and whisk to combine.
  6. Pour the batter into the prepared pan. Bake for 1 hour.
  7. When baked, cool on a rack to room temperature.
  8. Remove the side of the pan and cover with plastic wrap.
  9. Refrigerate for at least 6 hours.
  10. Cut into wedges and serve.
