  1. Preheat oven to 350 degrees.
  2. Butter 2 (8-inch) round cake pans.
  3. Sift dry ingredients and mix on low speed.
  4. Combine buttermilk, oil, eggs, and vanilla in another bowl and slowly add wet ingredients to dry.
  5. Add coffee and stir just to combine.
  6. Pour batter into prepared pans
  7. Bake for 35-40 minutes or until cake tester comes out clean.
