Ingredients:

  • 2 (28 oz) cans pork and beans
  • 1 medium onion
  • 1 lb hot dog
  • 1 (8 oz) can tomato sauce
  • 2 tbsp cooking oil
  • 1/4 cup butter
  • 1 3/4 cups water
  • 1 cup water
  • salt and pepper

Directions:

  1. You have to make the bean mixture up beforehand. Partially drain beans. Cut hotdogs into round slices and chop onion up fairly fine. Put a large skillet or pot on medium-medium high. Add the oil. Add the onions and hot dogs and cook for about 5 minutes. Add the beans and tomato sauce and 1/2 cup of water. Heat until it comes to a boil then turn heat down to a simmer. Add the hot sauce (no it ain’t too much but it really brings out the flavor) and salt and pepper. Simmer for at least one hour to allow the flavors to meld. Add water as needed to keep the sauce loose.
  2. About a half hour before eating, put the 1+3/4 cups or water and the 1/2 stick of butter in a pot that has a lid. Bring to boil then add rice. Cook one minute then cover and put on simmer for about 15 minutes. Salt and pepper as desired. When done set aside. When serving, place some rice in the bottom of a bowl and add some bean mixture. Make sure each person gets some of the hotdogs.
