  • 1 (8 oz) roll of reduced fat jimmy dean breakfast sausage

  • 1/2 tsp cumin
  • 1 dash salt and pepper

Directions:

  1. Preheat oven to 325.

  3. Combine the garlic, basil, allspice, and cumin together in a small bowl. Set aside.
  4. Wash and scrub the Sweet Potatoes ( you can peel them if you'd like but it's not necessary).
  5. Slice the sweet potatoes into cubes and place into the prepared baking dish.
  6. Slice the onion ( leave as large slices).
  7. In a medium skillet, cook and brown the sausage over medium-low heat.
  8. Once the meat is thoroughly cooked through add the onions and the brown sugar (Do not drain the meat as it is used for the sauteing).
  9. Saute for five minutes just so that the flavors mix.
  10. Spoon/Scrape fry pan mixture into the baking dish of sweet potatoes- stir to combine.
  11. Pour the seasonings over the mixture and, again, stir to combine. Make sure the seasoning has covered the entire contents of the pan.
  12. Place tin foil over the baking pan and set in the oven.
  13. Bake for 30 minutes or until the sweet potatoes are soft.
