Ingredients:

  • 1/2 cup brown sugar
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 cup melted butter
  • 1/2 cup milk
  • 1 egg
  • 3/4 tsp vanilla

Directions:

  1. Preheat oven to 350F.
  2. Prepare a 9x13 pan by spraying with cooking spray.
  3. In a mixing bowl, combine oats, sugar, baking powder, salt and cinnamon
  4. Add the melted butter, stirring until the mixture is well blended.
  5. In another bowl combine milk, egg and vanilla.
  6. Beat with a fork to blend the egg completely.
  7. Pour over oats and mix well.
  8. Pour the mixture into the prepared pan spreading it evenly.
  9. YOU'LL HAVE A VERY THIN LAYER.
  10. Bake for 25-30 minutes or until the edges are lightly browned.
  11. Remove from oven and immediately loosen the cooked oatmeal from the pan.
  12. Spoon into bowls and serve warm with milk.
  13. IF YOU ARE MAKING THIS AHEAD, LET THE OATMEAL COOL IN THE PAN, STIRRING IT OCCASIONLY SO THAT IT DOESN'T BECOME FIRM. THIS MAKES IT EASIER TO SPOON OUT INTO BOWLS. ONCE OATMEAL IT COMPLETELY COOL, TRANSFER IT TO A BOWL AND REFRIGERATE UNTIL READY TO USE.
  14. TO REHEAT, SPOON THE OATMEAL INTO INDIVIDUAL BOWLS AND MICROWAVE EACH BOWL UNCOVERED FOR 20-30 SECONDS. THEN ADD MILK.
