Awesome Almond Buckwheat Pancakes

Ingredients:

  • 1/3 cup whole wheat (or whole spelt) flour
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp sugar (optional)
  • combine separately
  • 1/3 cup yogurt
  • 1 egg
  • slivered almonds

Directions:

  1. Mix wet and dry ingredients until just incorporated - batter can be a bit lumpy.
  2. Heat a frying pan over medium heat with about a teaspoon of butter. You can spray your pan with oil (grape seed works well) instead if you like.
  3. Pour in 1/4 of the batter and generously sprinkle with slivered almonds.
  4. When bubbles start to appear in your pancake, flip it and cook until slightly browned on bottom.
  5. Repeat with the rest of the batter adding a bit more butter to the pan each time.
  6. Serve warm with maple syrup.
  7. Enjoy :-)
