Apricot Fudge Slice

Ingredients:

Directions:

  1. Heat 125g butter, brown sugar and condensed milk until the butter has melted.
  2. Do not boil.
  3. Add chopped apricots and crushed biscuits; mix well.
  4. Press into a greased 20 x 30cm sponge roll tin.
  5. Ice with Lemon Icing:.
  6. Beat butter until pale and fluffy.
  7. Add icing sugar, grated rind and lemon juice and sufficient water so that you have a fluffy light mixture.
  8. Spread over the slice and sprinkle with coconut.
  9. Set in refrigerator.
  10. Cut into squares.
