Ingredients:

  • 1/2 cup margarine
  • 3/4 cup white sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 cups flour
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp allspice
  • 1/4 tsp clove
  • 3/4 cup skim milk

Directions:

  1. Preheat oven to 350 degrees F.
  2. Cream margarine and sugar.
  3. Beat in egg and vanilla.
  4. Add baking powder, salt and spices.
  5. Add milk to margarine mixture in 2 parts alternately with flour.
  6. Begin and end with flour.
  7. Spread batter into a greased 8 square pan.
  8. (For a 9 X 13 cake, double the recipe.) Bake for 35 to 40 minutes.
  9. When cool, frost with your choice of frosting (I added some orange extract to vanilla buttercream).
