Ingredients:

  • 2 - 2.5 lb rockfish thawed if necessary

Directions:

  1. To 2.5 lbs. of Alaskan Rockfish Fillets, thawed if necessary
  2. Tbsp. Oil
  3. Medium Green Peppers, chopped
  4. Carrots, thinly sliced
  5. Large Onion, chopped
  6. Large clove Garlic, minced
  7. Can (28 oz.) Tomatoes
  8. Can (12 oz.) Tomato Juice
  9. -1/2 tsp. Worcestershire Sauce
  10. Tsp. each Sugar and Basil, crushed
  11. /4 tsp. salt
  12. /2 cup dry white wine or fish stock
  13. Cut Rockfish into 1-inch pieces.
  14. Heat Oil in large pot, & sauté Green Peppers, Carrots, Onion and Garlic until Onion is tender.
  15. Add Tomatoes, Tomato Juice, Wrocestershire Sauce, Sugar, Basil and Salt.
  16. Bring to boil; simmer 10 minutes. Add Wine and Rockfish.
  17. Simmer 8 minutes longer or until Rockfish flakes easily when tested with a fork.
  18. Makes 6 to 8 servings.
