Zucchini Brownies

Ingredients:

  • 3 eggs (or egg
  • 1/4 cup milk
  • 1/4 cup oil
  • 1 tsp vanilla
  • 1 1/2 cups zucchini, shredded (about 1 small)
  • 1 (19 oz) box brownie mix
  • 1/2 cup pecans, chopped (optional)

Directions:

  1. Whisk first 5 ingredients well.
  2. Add Brownie mix, stirring well.
  3. Fold in chips and nuts.
  4. Spread in jelly roll pan and bake according to box directions. Brownies will appear wet but will test done.
