Ingredients:

  • 2 lbs sweet potatoes (about 3 medium)
  • 1 large sweet onion
  • 2 tbsp olive oil
  • 1 -2 tbsp za'atar spice mix
  • 2 tsp salt

Directions:

  1. Preheat oven to 350 degrees F.
  2. Peel and cube sweet potatoes (about one inch cubes). Cut onion into wedges and then cut wedges in half (basically, big chunks).
  3. Put sweet potato and onion pieces into a 9 x13 baking dish and drizzle with olive oil. Sprinkle on za'atar and salt and toss to coat.
  4. Bake at 350 for one hour, stirring every 20 minutes.
