Tilly's Apple Spice Cake

Ingredients:

  • 2 cups flour
  • 2 tbsp cocoa powder
  • 3/4 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp nutmeg
  • 1/2 tsp allspice
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 1/2 cups sugar
  • 1/2 cup shortening
  • 2 eggs
  • 1 1/2 cups applesauce

Directions:

  1. Grease and flour a 8x8 baking pan. Set aside. Preheat oven to 350°F.
  2. In a medium bowl, combine all dry ingredients. Add the raisins (or dates) and stir to coat well. Set aside.
  3. Cream shortening and sugar for 2 minutes. Add eggs one at a time. Beat well.
  4. In small portions, alternately add the flour-raisin mix and applesauce. Begin and end with flour.
  5. Pour the mixture into the prepared pan. Bake at 350 for 40 minutes or until a cake tester inserted in center comes out clean.
  6. Cool completely on a wire rack. Sift powdered sugar over the cake just before serving.
