Ingredients:

Directions:

  1. Brown ground meat and onions together.
  2. Drain grease.
  3. Add tomatoes, enchilada sauce, olives, salt, pepper and garlic powder.
  4. In a mixing bowl, combine cottage cheese and egg. Mix well.
  5. In a 9 x 13 baking pan, add 1/3 of meat mixture.
  6. Add 1/2 of the cottage cheese mixture over meat layer.
  7. Spread 1/2 of the jack cheese over the cottage cheese layer.
  8. Place 1/2 of the tortilla halves over the jack cheese.
  9. Spread another 1/3 of the meat mixture over the jack cheese.
  10. Spread the remaining cottage cheese mixture over the jack cheese layer.
  11. Place remaining tortilla halves over jack cheese layer.
  12. Pour remaining meat mixture over tortilla halves.
  13. Sprinkle cheddar cheese over the top of casserole.
  14. Bake at 350 degrees for 20 minutes.
