Spicy Gingerbread Scones

Ingredients:

  • 2 cups flour
  • 3 tbsp sugar
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/4 cup butter
  • 1/3 cup molasses
  • 1/4 cup milk

Directions:

  1. In a large bowl, stir together first 8 ingredients.
  2. Using a pastry blender, cut in butter till mixture resembles coarse crumbs and make a well in the center.
  3. In a small bowl, stir together egg yolk, molasses and milk.
  4. Add to center of flour mixture and combine with a fork, mix well.
  5. Mixture will be dry in texture.
  6. Turn dough onto lighlty floured surface.
  7. Quickly knead dough for 10-12 strokes or till nearly smooth.
  8. Pat into a 7 circle and cut in 8 wedges.
  9. Arrange wedges one inch apart on ungreased sheet.
  10. Brush with egg white and sprinkle with sugar.
  11. Bake 400 for 12-15 minutes till light brown.
  12. Best when served warm.
