Ingredients:

  • 250 g cornflour
  • 1 large red onion

Directions:

  1. To make the Tortilla: Mix the flour with water to create a dough. Make sure that the texture of the dough is not too dry, otherwise the tortilla will break.
  2. Make the dough into small balls. Take a plastic bag and cut the dough into two equal parts. Place the dough between the bags and press it to make a tortilla.
  3. Place the tortilla into a hot frying pan making sure not to break it. Cook for a few minutes on both sides or until brown.
  4. To make the Chicken - cook the chicken breast(s) with the onion, garlic, salt, pepper and coriander – 10-15 minutes. Once the chicken is cooked shred it and put it to one side.
  5. In a blender, blitz the tomato, onion and season with salt, pepper and garlic. Blend and transfer to a frying pan and cook for 5-8 minutes.
  6. Add the chicken to the frying pan and cook for a further 5 minutes.
  7. Add a couple of tablespoons of tequila and simmer for 5 minutes.
  8. To make the Salsa - In a hot pan combine the garlic, tomatoes, onions and the chilies – 10 minutes. Once they are soft and very slightly burnt put them into a blender and mix together. Add red wine to the mix and season.
  9. Making The Tortilla Into Tacos: Put some of the chicken on a tortilla and roll it up, making sure the tortilla does not break. In a frying pan with hot oil, place the taco(s) and fry until golden and crispy – 3-5 minutes.
  10. To make the guacamole: Mix together all the ingredients.
  11. Presentation: Plate the hot tacos and put some sliced lettuce on top of them. Finish by pouring sour or double cream and the salsa over the tacos and serve immediately, with guacamole as a side dish.
