Ingredients:

Directions:

  1. Slice eggplant, not too thin, and place in a colander.
  2. Salt and let stand for 20 minutes.
  3. Sift dry ingredients together.
  4. Combine milk and eggs; beat into dry mixture.
  5. Dip eggplant into batter and fry in oil at 375° until golden brown.
  6. Drain on paper towels, serve warm.
