    here are the basics of making an excellent cheese fondue , the proper way (or at least the lindysez way)., use good cheese , i use half emmental swiss and gruyere, grate them up and toss them with some salt and a good amount of pepper. let them sit out at room temp so they melt better . cut your bread (good french bread, but not sourdough) into bite sized pieces making sure to have crust on each piece. let those sit out for a while too so they aren tsp too soft., cheese that you use , you are going to use 1 3/4 cups of a dry white wine, such as a fume blanc, a california sauv blanc (don tsp use a new zealand 1 as most are too grassy) or a pouilly-fume. when you are ready to make the fondue, rub the pot with a clove of garlic (we like garlic, so we leave the clove in, but you don tsp need to); then place over a medium heat and add the wine. when the wine comes to a simmer, start slowly adding the cheese, sprinkling in a handful at a time, allowing each addition to melt (my dad said you always have to stir in the same direction, in a figure 8 motion, it works. if you stir in a circle you will end up with a big glop of cheese in the middle of a pot of wine, the figure 8 is key); keep adding until you have a nice thick sauce, then add a splash of kirsch and a pinch of nutmeg. put over a burner to keep it bubbling, and stir often when you dip your bread., a lb of cheese is enough for 4 people; or more if you are serving other things. and the amounts are guesstimates. i almost always grate too much cheese, so only add as much as you need to get the right consistency ; when you dip a piece of bread into the fondue, you want a nice coating of cheese and for the bread to absorb the wine. that s what it s all about, cheese, wine and bread. so use the best you can of each ingredient. and any left over cheese makes for a mighty good ham and cheese omelet.

    most every barbecue joint and shack makes some variation of barbecued beans. they all taste a little different--a pitmaster s prerogative--but share a similarly spicy, sweet, and smoky flavor. we wanted to develop a simple recipe that could be prepared alongside smoking ribs or pork shoulder. here s what we discovered, test kitchen discoveries, cook the beans on the stovetop until soft , then transfer them to a disposable aluminum pan, wrap them tight, and nestle the pan into the bottom of the grill next to the coals (place it right in the drip pan, if using). poke holes in the pan s lid so the grill s smoke can permeate the pan and flavor the beans., used dried pinto beans ; canned beans will turn mushy and fall apart long before the sauce s flavors have blended. soak the beans in water overnight to guarantee even cooking., flavor the beans with bacon and barbecue sauce for an extra-smoky flavor. stir a little fresh barbecue sauce into the beans just before serving to sharpen the sauce s flavor., beans on the grill, our bbq beans finish cooking on the grill , where they pick up smoke and pork flavors. here s how to let the flavors in and keep the grease out., when the beans are tender and the sauce is slightly thickened, transfer the beans to a 13 by 9-inch disposable aluminum pan. wrap tightly in foil and poke several holes in the foil so that the juices from the ribs can flavor the beans., when you re ready to add more coals, nestle the beans in the pan already on the bottom of the grill. replace the cooking grate, making sure to position the ribs directly above the beans.

(wow, and we drink this stuff), kool aid can be used as a dye in paint also kool aid in dannon plain yogurt as a finger paint , your kids will love it and it won tsp hurt them if they eat it, peanut butter - will get scratches out of cd s! wipe off with a coffee filter paper, sticking bicycle chain - pam no-stick cooking spray, pam will also remove paint , and grease from your hands! keep a can in your garage for your hubby, peanut butter will remove ink from the face of dolls, when the doll clothes are hard to put on, sprinkle with corn starch and watch them slide on, heavy dandruff - pour on the vinegar, body paint - crisco mixed with food coloring. heat the crisco in the microwave, pour in to an empty film container and mix with the food color of your choice, tie dye tsp-shirt - mix a solution of kool aid in a container, tie a rubber band around a section of the tsp-shirt and soak, preserving a newspaper clipping - large bottle of club soda and cup of milk of magnesia , soak for 20 min. and let dry, will last for many years, a slinky will hold toast and cd s, keep goggles and glasses from fogging, coat with colgate toothpaste, wine stains , pour on the morton salt and watch it absorb into the salt., wax - take a paper towel and iron it over the wax stain, it will absorb into the towel., labels off glassware etc. rub with peanut butter, baked on food - fill container with water, get a bounce paper softener and the static from the bounce towel will cause the baked on food to adhere to it. soak overnight. also; you can use 2 efferdent tablets , soak overnight, crayon on the wall - colgate toothpaste and brush it, dirty grout - listerine, stains on clothes - colgate toothpaste, grass stains - karo syrup, grease stains - coca cola , it will also remove grease stains from the driveway overnight. we know it will take corrosion from car batteries, fleas in your carpet 20 mule team borax- sprinkle and let stand for 24 hours. maybe this will work if you get them back again., keep fresh flowers longer add a little clorox , or 2 bayer aspirin , or just use 7-up instead of water., when you go to buy bread in the grocery store, have you ever wondered which is the freshest, so you squeeze for freshness or softness did you know that bread is delivered fresh to the stores five days a week monday, tuesday, thursday, friday and saturday. each day has a different color twist tie., are, monday = blue, tuesday = green, thursday = red, friday = white, saturday = yellow ., if today was thursday , you would want red twist tie; not white which is fridays (almost a week old)! the colors go alphabetically by color blue- green - red - white - yellow, monday through saturday. very easy to remember. i thought this was interesting. i looked in the grocery store and the bread wrappers do have different twist ties, and even the ones with the plastic clips have different colors. you learn something new everyday! enjoy fresh bread when you buy bread with the right color on the day you are shopping., forget gatorade for migraine headaches. powerade won tsp work.

(am using my bread machine as kitchenaide is out of commission right now)., way i added more nutrition & flavor to this loaf was by soaking my grains overnight, then adding them to machine (original recipe does not call for added grains). using a 1 cup measuring cup, i filled it 3/4 of the way full with a mixture of brown rice flour, quinoa and barley flakes (looks like oatmeal)-i dumped that into a dish and added 1/2 cup of warm water, stirred it around, and let it sit (covered) overnight so that the grains could absorb the water. i ve been reading a lot about grain (and whole grain flour soaking) and so far, this seems to have served me well. you can use any combination of whole grains-this is just what i used. next day when i was ready to make bread, i did this, i set my machine on the dough (or manual) cycle and layered these ingredients in the bread machine in the following serving, warm water, molasses, sugar, kosher salt, lemon juice (bottled ok-it helps the yeast and helps crumb be less tender), oil, whole grain mix i created, rye flour, vital wheat gluten (flour), bread flour (i usually use just a speck over 2 & 1/2 cups), active dry yeast (yes, 6 tsp), also need, egg wash to brush on top (1 egg, beaten well with a pinch of salt and a tsp of water) & oat bran to sprinkle on top & make it pretty., once the ingredients are in , press start and let your machine run thru the dough cycle., once that s complete , remove dough divide it in half, shape it freeform (i just make a round loaf), place shaped loaves on parchment lined baking sheet. cover dough with plastic wrap and let it rise until almost double in size (about an hour in my kitchen). when dough nears the end of it s rising time, preheat the oven to 375o (i bake it at 365o, but i m a bit neurotic about bread)., once oven is heated , brush loaves with egg wash, dust them with oat bran, score/slash them about 1/4 deep and load them into oven., bake 375o for about 30-35 minutes until loaf sounds hollow when bottom is tapped (or for 38-40 minutes at 365o)., cool on wire rack .
