ripe roma tomatoes, quartered and seeded, plain diced tomatoes, garlic cloves, whole, jalapeno peppers, quartered and seeded, onion, cut into 1-inch chunks, limes , juice of, fresh cilantro, stems removed, whole, fresh ground pepper, red pepper flakes, salt

ripe tomatoes , diced w/ juice (use large can if fresh not available), rotel diced tomatoes w/ green chillis, rinsed and drained, onion, diced (choose size depending on your preferences; i use my food processor and dice these with the pulse setting.), fresh chopped cilantro (about a handful), garlic, finely minced (you can substitute 1 tbsp. minced garlic here.), juice of 1 lime, diced jalapeno peppers or variety of your choice (i love to use pablanos.), black beans, rinsed and drained, shoepeg or yellow corn, whatever else you choose to add or delete, don tsp omit the cilantro! it makes all the difference
