pizza dough (approximately two can of pillsbury or any brand refrigerated dough, or even frozen dough), red pepper, cut in in thin strips, green pepper, cut in thin strips, mushrooms (i prefer crimini, but button will work fine, thick sliced and roasted), japanese eggplant , cut lengthwise diced, white onion, cut in half sliced, mozzarella cheese, grated, parmesan cheese, grated, dried oregano, fresh basil, fresh parsley, red pepper flakes (to taste, i like to use a bit more), kosher salt, ground black pepper, olive oil (plus a little extra to brush on the crust to bake)
