Rice Pilaf With Beans

Ingredients:

Directions:

  1. Heat oil in a heavy saucepan over medium heat.
  2. Sauté rice until golden.
  3. Stir in stock, water and pepper.
  4. Increase heat to high and bring to a boil.
  5. Immediately reduce heat to low.
  6. Cover and simmer 20-25 minutes or until rice is tender and liquid absorbed.
  7. Stir in beans.
  8. Turn on broiler.
  9. Transfer rice to ovenproof serving dish.
  10. Arrange tomato slices over beans and dot with butter.
  11. Broil 2-3 minutes or cook until tomato slices are cooked throughout.
  12. Serve pilaf sprinkled with mint.
