Perfect Boiled Custard

Ingredients:

  • 2 eggs
  • 1/4 cup sugar
  • 1 1/2 tbsp all-purpose flour
  • 1/8 tsp salt

Directions:

  1. Beat eggs in top of a double boiler on medium speed of an electric mixer until frothy.
  2. Combine sugar, flour, and salt; stirring well; gradually add to eggs, beating until thick.
  3. Gradually stir about one-fourth of hot milk into egg mixture; add remaining milk, stirring constantly.
  4. Bring water in bottom of double boiler to a boil.
  5. Reduce heat to low; cook, stirring occasionally, 20 minutes, or until custard thickens and coats a metal spoon.
  6. Stir in vanilla.
  7. Pour custard into serving bowl and chill.
