Peach Cobbler Fried Ice Cream

Ingredients:

  • 1 1/3 cups graham cracker crumbs (7 large crackers)
  • 1/3 cup(2 oz)slivered almonds
  • 1/2 cup(2 oz) pecan pieces
  • 6 scoops blue bunny homemade peach ice cream(or any other brand of peach ice cream)
  • 1 lb. frozen peach slices
  • 1/3 cup water
  • 1 (64-oz)bottle vegetable or canola oil

Directions:

  1. In food processor or blender, process graham crackers, almonds and pecans until finely ground.
  2. Roll ice cream into balls.
  3. Dip each ball in a bowl of cold water and then roll in graham cracker mixture until completely coated.
  4. Freeze until ready to use.
  5. In a saucepan, bring peaches, brown sugar and 1/3 cup water to a rolling boil for 5 minutes, or until sauce thickens to a syrup consistency.
  6. Add liqueur and return to boil, thenn reduce heat to low to allow the alcohol to evaporate and keep warm until ready to serve
  7. In deep pan, heat oil to 365 degrees F(this will take 9 minutes or so)
  8. Fry ice cream balls, one or two at a time, for about 30 seconds or until lightly browned.
  9. Remove from oil and place in individual bowls.
  10. Top with hot peach mixture.
  11. Garnish with whipped cream tower!
