Ingredients:

  • 1 1/4 cup sugar, divided
  • 1 cup flour
  • 1 cup milk
  • 1/4 tsp salt
  • 1 container cool whip

Directions:

  1. ) Pour butter into a shallow 9x9 baking dish; set aside
  2. ) drain peaches, but SAVE 1/4 cup of juice.
  3. ) In a saucepan, bring peaches & juice to just a boil
  4. ) MEANWHILE, in a mixing bowl, combine 1 cup of the sugar, flour, milk, baking powder, and salt. Mix well.
  5. ) Pour over butter in dish. Spoon hot peaches over batter. Sprinkle with remaining sugar.
  6. ) Bake at 400 degress for 25 minutes and serve warm with cool whip topping.
