Ingredients:

  • 2 eggs
  • 4 oz sugar
  • 1 pinch salt
  • 1 orange , juice and rind of
  • 4 oz butter

Directions:

  1. Grease and lightly flour cake tin.
  2. Beat butter and sugar for about 5 minutes.
  3. Add eggs to mixture and stir.
  4. Add grated orange peel, sifted flour and salt.
  5. Stir lightly to mix.
  6. Pour into prepared cake tin.
  7. Bake in moderate oven 350 degrees F (150C) for around 40 minutes.
  8. (Use the juice from the orange to make the icing by mixing it with powdered sugar and butter.).
