Ingredients:

  1. Preheat oven to 350*.
  2. My baby orange hubbard had a soft spot in the bottom after last nights' freeze, so it's time to bake it up.
  3. Wash the skin. Cut the soft spot off the bottom. Scraped the seeds and strings from the cavity. Cut the squash into about 2 rings then into 2 cubes. Peel the skin.
  4. Wash the flesh and arrange on a baking sheet covered with parchment paper.
  5. Bake at 350* in a conventional oven for 45 minutes or until wooden pick pierces the flesh without resistance.
  6. My pics show the flesh a little over-done. I was using a convection oven at almost an hour. The bake time and temp in the recipe has been adjusted but keep an eye out. It all depends on the chuncks of flesh.
  7. I ate almost half of the pieces while cutting out the black edges. So my hubbard made 2 cups of chunks after munching.
  8. Use them for soups or stews or puree it up. Can be frozen in chunks or puree and use it in place of your other squash in recipes.
