  1. In a food processor combine the mint, walnuts, garlic, lime juice , cumin, pepper and salt (which is optional). Process for thirty seconds. Then, with the motor running, add the oil in a slow stream and process for another 15 seconds or until smooth. Store or serve.
  2. TOAST THE WALNUTS IN A FRY PAN OVER MEDIUM HEAT USING PAM OR OLIVE OIL FROM THE BOTTLE BEING CAREFUL NOT TO BURN THE NUTS. COOK FOR ABOUT THREE MINUTES UNTIL VERY AROMATIC AND BEGIN TO TURN BROWN.
