Ingredients:

Directions:

  1. Preheat oven to 350.
  2. Sift soda, baking powder, cinnamon, salt over pecans. Mix well.
  3. Add oil, sugar, eggs. Mix well.
  4. Add grated carrot, pineapple and raisins. Mix well.
  5. Pour into well-buttered 9 square pan. (I use parchment paper).
  6. Bake 40 minutes or done to toothpick test.
  7. Moist enough that it needs no icing, but:
  8. Icing as shown above is heaven.
