Kitty's Irish Soda Bread

Ingredients:

  • 1 tsp salt
  • 1/4 cup unsalted butter (1/2 stick)
  • 2 cups raisins
  • 1 1/3 cups buttermilk
  • 1 egg

Directions:

  1. Preheat Oven to 375°F.
  2. Grease a 2 quart Casserole.
  3. Into a mixing bowl, shift flour, sugar, salt and baking powder.
  4. Cut in butter w/ pastry cutter (or 2 knives scissor fashion), until like course cornmeal.
  5. Stir in raisins.
  6. In separate bowl combine buttermilk, egg and baking soda.
  7. Stir into flour mixture until just moistened.
  8. Turn onto lightly floured surface,.
  9. Knead lightly until smooth.
  10. Shape into ball and place in casserole.
  11. Make 4 inch cross 1/4 inch deep.
  12. Brush with egg yolk.
  13. Bake 1 hour cool in pan for 10 minutes.
