Kentucky Pecan Cake

Ingredients:

Directions:

  1. Combine first 7 ingredients in order listed; beat at medium speed of mixer until smooth.
  2. Stir in chopped pecans.
  3. Beat room temperature egg whites until stiff; fold into batter.
  4. Pour mixture into an ungreased 10-inch tube pan.
  5. Bake at 350 degrees for 1 hour and 30 minutes.
  6. Invert pan, and cool cake completely; remove from pan.
  7. Sprinkle top of cake with powdered sugar.
