Ingredients:

  • 1 cup flour
  • 1 egg
  • 1 tbsp olive oil
  • 1/2 cup water
  • 1/4 tsp harissa
  • 1/2 tsp cumin
  • 1/4 tsp dried thyme
  • salt & pepper (to taste)

Directions:

  1. Cut salsify roots in half & boil in salted water for 30 minuites.
  2. Rinse in cold water.
  3. Peel & cut into 3 inch pieces.
  4. Make the batter:blend all the indgredents in a food processor for 30 seconds.
  5. Heat the oil in a large frying pan.
  6. Dip the salsify in the batter and fry in oil until crisp & golden turning.
  7. Keep warm whil cooking the remainder.
  8. Serve hot with lemon wedges.
