Ingredients:

  1. Add the softened cream cheese to a medium bowl.
  2. Chop 1 slice of a red onion into small bits. Chop the scallions into similar size and add both to the cream cheese. The red and green onion give the cheese ball not only flavor but a pleasing color.
  3. Add chopped walnuts and crushed pineapple to the cheese and onions. Mix well.
  4. Add more onion and walnuts to taste. The onions and walnuts give the cheese ball a nice texture.
  5. Put the cheese mixture into a pretty bowl or roll into a ball.
  6. Sprinkle or roll the outside with parsley and chopped walnuts.
  7. Refrigerate for at least 1 hour to allow the flavors to develop.
  8. Soften before serving and serve with your favorite crackers.
