Easy Enchilada Sauce (Red)

Ingredients:

  • 2 tbsp oil
  • 2 tbsp flour
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp garlic powder
  • 1 1/2 cups chicken broth
  • 1/4-1 tsp cayenne pepper (optional)

Directions:

  1. Heat oil in medium saucepan.
  2. Whisk in flour until smooth.
  3. Stir in spices, cook 1 minute.
  4. Whisk in broth until smooth.
  5. Add the tomato sauce, and salt and cayenne pepper to taste.
  6. Bring to a boil, reduce heat and simmer about 15 minutes.
  7. This is wonderful made a day ahead, the flavors combine even more.
