Ingredients:

  • 1 egg
  • 1 cup milk
  • 1/2 cup coconut
  • 1/2 tsp lemon extract
  • 2 cup flour
  • 1/2 tsp salt

Directions:

  1. Mix sugar,butter,and egg. Add coconut. Mix in flour,baking powder and salt alternately with milk and lemon extract.
  2. Beat 2 mins. Pour into 9x5 loaf pan. Bake in preheated 375 oven for 1 hour.
