Beet Salad With Apples and Oranges

Ingredients:

Directions:

  1. Roast unpeeled beets in a covered casserole at 400F for one hour.
  2. Let beets cool, remove skins and chop.
  3. In a medium bowl combine chopped beets, apple, orange and feta cheese.
  4. Whisk remaining ingredients together in a small bowl and add to salad.
