  • 1 medium onion
  • 12 medium eggs
  • 1 lb bacon
  • 1/2 lb sausage
  • 1 small bell pepper
  • 2 cups hash browns

  • 1 Heat oven to 350.
  • 2 Cook bacon in skillet until crisp.
  • 3 Cook sausage until done.
  • 4 In the grease from the bacon cook the Hash Browns until done.
  • 5 finely chop onions and bell pepper.
  • 6 In large bowl whisk eggs, (about 30 Seconds).
  • 7 Chop bacon and sausage to bite size pieces.
  • 8 Add all ingredients to eggs and whisk together.
  • 9 Spray a 6x9 baking pan with a nonstick spray. (DO NOT use butter or grease they burn the eggs.).
  • 10 Bake at 350 for 1 hour or till firm.
  • 11 Remove from oven and cover with cheese and return to oven for 15 minutes.
  • 12 Serve hot.
  • 13 great for the day when everybody decides to show up at your place. Or for the person that likes to cook ahead for the week.
