Ingredients:

Directions:

  1. In large bowl, combine eggs, sugar, vanilla, oil, and zucchini; beat well.
  2. In small bowl, sift together flour, powder, soda, cinnamon, and salt.
  3. Add to zucchini and mix well.
  4. Stir in raisins and walnuts.
  5. Pour into 2 greased and floured loaf pans. Don't overfill.
  6. Bake at 375 F for about 1 hour or until toothpick comes out clean.
  7. Cool 15 minute and then turn out onto racks to cook completely.
  8. Freezes well.
